Hi Brenda. 

Thanks for your comment. I completely agree... organs and offal are the most nutritious foods on the planet for us humans. As you say, the fats and nutrients are perfectly balanced for our optimal health - it&#039;s almost as if our bodies are finely tuned to eat meat and all parts of the animal - mother nature has worked her magic through evolution. Added bonus, they are very yummy.

Brains are less known and not as available. I&#039;ve tried veal brains and they&#039;re delicious, full of gorgeous creamy fat - the good kind. My butcher has just started selling pigs brains so I&#039;ll be getting some on my next visit.
